DIRECTOR OF LIVING SYSTEMS, THE PERENNIAL
Nathan Kaufman is the Director of Living Systems for The Perennial, a San Francisco based restaurant dedicated to combating climate change one meal at a time. Nathan designed & manages The Perennials aquaponic greenhouse & market garden, as well as its composting program where restaurant waste is utilized to grow insects used as a sustainable fish feed.
Nathan is the former R&D Director of Viridis Aquaponic Growers, and has worked with aquaponics on levels from homesteading to commercial food service. Nathan also serves as the Executive Director for The Perennial Farming Initiative, which works to empower farmers to fight climate change with the help of diners and chefs.
